Tasting notes
The aromas are sweet and ripe, such as apricot, mirabelle, dried fruit and confiture, as well as complex notes of caramel, wasanbon, kashiwa mochi, cinnamon and white figs. The acidity is moderate and tastes like ginger, black tea and whisky. Tannins and alcohol are still noticeable, but the aftertaste is long with full aromas and fruit with tannins. A powerful wine with ageing potential.

Winemaking
Chardonnay vines, aged 6 to 7 years, were planted on a southwest-facing slope at an altitude of 430 meters on a limestone karst plateau. Harvested in early November, the grapes were destemmed using a destemming machine but left uncrushed. They underwent maceration with the skins in a stainless steel tank. During fermentation, punching down was performed to extract components from the skins. After pressing, the wine was aged in French oak barrels before bottling.
Until the 2020 vintage it was made as 'Chardonnay Macéré', but from the 2021 vintage it has been changed to 'Chardonnay Origine'. ‘Origine' means ‘beginning, origin’ in French. They started making macerated Chardonnay from 2018. The name was changed to reflect the history of winemaking, where even white grapes were soaked with the skins, and the great respect for the ancestors who made them.
