Tasting notes
Wild berry, raisin, toast, flint, yogurt, and shiso aromas, with a subtle sweetness reminiscent of red bean paste. The palate is clean and refreshing, with a well-balanced combination of red fruit flavors like strawberry and red plum, complemented by bright acidity. The finish lingers with a long-lasting strawberry note.

Food pairing
Drool chicken, stir-fried aubergine with miso, seared mackerel, Galician-style octopus, oil-marinated oysters, smoked duck, grilled lamb with cumin, liver pâté, miso-marinated cheese, chicken ham with sansho pepper.

Winemaking
A-danza Frizzante, which has been imported every year since GUBI GUBI's beginning, has arrived with the latest 2023 vintage. In 2023, there was a cold snap in mid-May and a late frost, which significantly reduced the harvest. However, after that there were many sunny days and temperatures above 35°C, which resulted in a very good grape harvest. 

No pesticides or chemical fertilisers are used in the viticulture at Aizawa Nouen. The main variety of this wine, Kiyomai is a Japanese variety that took over the main features of the Japanese indigenous variety Yamabudou with refreshing acidity. The other variety, Yamasachi, which was developed by crossing an indigenous Japanese variety called Kiyomi with Yamabudou, is registered as an international variety with the OIV (International Organisation of Vine and Wine). 

After pressing the grapes with whole bunches, fermented with wild yeasts at a temperature between 17-21°C for 50 days. Later added with the juice which was kept when the grapes were pressed, bottled unfiltered and second fermentation in bottle.
