Winemaking
A hugely popular rosé made from Aki Queen, a table grape variety native to Japan, is finally back in stock. Since the early days of GUBI GUBI, we have been importing Aki Queen wines from domaine tetta, including Perlant Rosé 2020 and Bonbons Colorés 2021—both of which have been extremely well-loved. The latest release, Aki Queen 2023, was also snapped up immediately when we first imported it in 2024, selling out in no time.
The 2023 vintage is made from Aki Queen vines aged 7 to 25 years, with the fruit harvested between 13 September and 30 November 2022. The grapes were handled with minimal intervention, no destemming and no crushing, and fermented in stainless steel tanks, then aged in bottle. At bottling, only 15 ppm of sulphites was added.
At domaine tetta, Aki Queen began to be cultivated in earnest as a true wine grape from the 2020 vintage onwards. We were told the team has continued to explore different approaches in order to better understand and express the variety’s character. In the 2022 vintage, their aim was to intentionally bring out volatile acidity, choosing not to adjust acidity and instead working with the presence of acetic nuance as part of the wine’s overall expression. For the 2023 vintage, however, the direction shifted towards a simpler approach—finding balance through assemblage. While simplicity can be deceptively challenging and demands a great deal of experience and precision, the producer feels this marks another clear step forward.
