Winemaking
This wine has a higher proportion of black grape varieties from their own vineyards than the FUKUIHARA rosē, which we imported in 2023. The cuvées from several vintages are combined for the wine's finish (M.V. stands for Multi-Vintage. It is a wine in which cuvées from several vintages are combined). Chardonnay and Cabernet Franc from Yoshizawa, a young grower who opened a vineyard in Fukuihara, where the winery is located, at the same time as them, and Muscat Bailey A and Pinot Noir from their own vineyard were used to make the wine. The Chardonnay from 2021 was aged in bulk stainless steel, the 2022, fermented in barrels and matured in barrels (8 months), and the 2022, shade-dried and matured in stainless steel tanks. The Muscat Bailey A and Cabernet Franc were 2022s that were barrel-aged (8 months). Pinot Noir is from 2022, fermented and matured in stainless steel tanks, with red varieties accounting for approximately 30% of the total.
Domaine Hase is located in the Fukuihara area of Takayama village in the northern part of Nagano prefecture, in a spectacular landscape at an altitude of 800 m with a view of the Hokushin Five Mountains, and has a vineyard of about 6 ha. In 2021, despite continuous rainfall from July to the first half of September, the weather was good throughout September and the wine made from Chardonnay was balanced in sugar and acidity, which allowed them to age further. 2022 was a different year, with rain and lack of sunshine in September resulting in Chardonnay that was less concentrated, so the grapes were shade dried and barrel matured to increase concentration. However, in 2022, the weather recovered in the second half of the year, and the late ripening Muscat-Berry A (harvested in early November) became a very crisp cuvée with firm acidity and dark colour, which tightens the wine's overall structure.
