Tasting notes
Very acidic, mushroom, red berries, star anise, soil and minerals. Juicy and refreshing acidity. Surprising mandarin orange aftertaste with the feeling of drinking orange wine. 

Food pairing
Fried seafood, Tan-shio (grilled salty beef tongue), Yakitori, Agedashi-tofu (deep-fried tofu in Dashi soup), salted rice cracker, soy-marinated tuna sashimi.

Winemaking
Made from Yamabudou grown in Iwate. Yamabudou is a wild variety that has been native to Japan for centuries and is attracting attention for its high potential and international reputation. It is made from a blend of the grapes fermented in Qvevri and those fermented and aged in French oak barrels.
