Tasting notes
Sweet aroma with hints of pineapple candy and tropical fruits. Green apple flavour, crisp acidity. Fresh and easy to drink.

Aperitifs, cold starters of seafood, Japanese style hotpot with plenty of vegetables, simply sautéed chicken, slightly salty cheeses made from cow’s milk

Winemaking
100% Delaware from Okihama, Yamagata. There was a long period of rain in August 2021 when the grapes were harvested, but they ripened beautifully. In September, when the grapes arrived at the winery, in the lingering summer heat, they were immediately pressed and allowed to ferment naturally without the addition of yeasts. Fermentation began and the winery was filled with the sweet aroma of Delaware. The wine was left to ferment in open tanks for two weeks, after which they were separated into 200-litre resin tanks and allowed to settle on their lees. When the wine has settled down, 25% of the wine from the early harvest Delaware wine from a grape grower “Budou to Ikiru” in Yamagata was added to balance the acidity. Just before bottling, 20 ppm sulphites were added to protect against shock and temperature changes during transport. Enjoy it with your daily meals at home on your tabletop (dining table).
