Tasting notes
The aroma of fancy candy, fully ripened grape, mandarin orange, and dried apricot. A hint of black tea flavour. Light tannins, crispy, refreshing acidity, slightly carbonated.

Food pairing
Japanese dishes with Mirin (Japanese cooking rice wine with sugar) and soy sauce, a little spicy food, light and fresh goat cheese

Winemaking
Despite the bad weather in 2021, fully ripe Delaware arrived at the winery. The Daidai (Orange) cuvée is made by fermenting the Delaware grapes in their skins to extract the components trapped in the skins. Whole bunches of grapes were placed on top of the slightly crushed grapes to seal the tank. Intracellular fermentation took place and then crushed. Further fermentation was carried out and the grapes were put into the press when the components of the skins had been fully extracted. The wine was stored in stainless steel tanks for two months before bottling. No sulphites are added.
