Winemaking
No pesticides or chemical fertilisers are used in the viticulture at Aizawa Nouen. Yamasachi is an indigenous Japanese variety developed by crossing Yamabudou with Kiyomi. The grapes were macerated in whole bunches at low temperature for 40 days before pressing. After fermentation with wild yeasts, the wine was stored in wooden barrels for six months. A very small amount of sulphite was added when bottling.
