Winemaking
Eight varieties of grapes, mainly table grapes, are used. The main varieties are Aki Queen and Muscat Bailey A, which are indigenous to Japan. Each was harvested at the best possible time and put into tanks with the whole bunches without destemming, followed by carbonic maceration for about a month. The wine was then destemmed and crushed before being pressed in a balloon press and fermented in stainless steel tanks. The wine is filtered through a coarse filter (75µ) at the final stage of fermentation and bottled without added sulphites to produce a slightly fizzy type of wine. No added sugar, acid or fining.
