Winemaking
Muscat Bailey A, a variety indigenous to Japan, is used. Fermentation in stainless steel tanks without crushing the grapes, using only wild yeasts. After maturing in wooden barrels, the wine was filtered through a coarse filter (75µ) and bottled. No added sugar, acid or fining. Made from grapes harvested from the winery's oldest vines, which are 22 years old. The wine can be drunk now or matured for a long time to enjoy its different expressions.
