Winemaking
100% Muscat Bailey A grown in Nabari, Mie, a grape-growing region with a 60-year history. The vines are magnificent, having been there since the cultivation of the land about 50 years ago. Firmly ripe grapes were destemmed and crushed, and naturally fermented in open resin tanks under controlled low temperatures. Daily gentle and careful punching down (stirring in the tanks with an oak stick) extracted the phenolic components from the skins and seeds, while tannin and bitterness were softened and extracted. The wine was pressed in a basket press when the cap was set and then stored in French oak barrels for about nine months.
