Tasting notes
Fresh and fruity aroma like plums, white peach and orange peel. Milky aroma can also be found. Gentle orange flavour, slightly carbonated, refreshing.

Sautéed prawns, scallops and white fish, moderately spiced dishes such as tagines and tandoori chicken

Winemaking
Okuyama Nouen (Nouen means “farm”) in Yamanashi is led by a mother who carefully grows grapes and persimmons. In 2020, which has had a lot of rain since early summer, the colour was slightly paler than usual, but the sweet, gentle and somewhat refreshing taste of their grapes was still there. With this characteristic, they decided to try rosé this year. After harvesting, the grapes were carefully selected and then pressed in whole bunches. Pressing was done as gently as possible so as not to spoil the freshness of the juice. Then the natural fermentation process began and finished in open tanks, before transferring to resin tanks and waiting for the lees to settle before bottling.
