Tasting notes
Flint, apple, white flowers, quince, pear, a bit of citrus, brioche and butterscotch. Palate of citrus and apple with mild oaky notes. Soft mouthfeel supported by firm acidity. Long aftertaste.

Winemaking
Made from Chardonnay grapes grown in the winery's own vineyard in the Kanou area of Tomi, Nagano. The vineyard is characterised by a south-west facing slope with a firm, sunny aspect and clay soil. After only healthy grapes were harvested, the grapes were cooled overnight and pressed in whole bunches. The juice was transferred to barrels for fermentation with wild yeasts. The wine was then matured in barrels for one year and bottled unfiltered, before being released after six months of ageing in bottle.
2022 was a difficult year in terms of colouration and sugar content due to unusually hot and dry weather in June and a lack of sunshine in August. Harvesting was earlier than usual due to the condition of the grapes, as there was also a lot of rainfall at harvest time.
