Tasting notes
Aromas of sweet ripe red fruit, confiture, dried fruit and cacao. Slightly sweet, with a good balance between acidity and tannins. The palate is fruity and savoury, with a very long finish. It can be enjoyed now, but also has the potential to age for several years.
Food pairing
Steak tartare, steak, galantine, porchetta, Chinjao Rosu (stir-fried shredded beef with green pepper), beef cheek simmered in red wine sauce
Winemaking
Made from Cabernet Franc grown on south-west-facing slopes on limestone soil at an altitude of 400 metres. The vines are 6-10 years old, and were harvested manually in between late November and early December. The destemmed grapes were transferred to stainless steel tanks without crushing. Maceration for 32-36 days with punching down during the process. Matured in old French oak barrels for 5 months.
domaine tetta has produced two different wines from Cabernet Franc in the 2020 and 2021 vintages (slightly earlier harvested, lighter coloured Printemps and later harvested, darker coloured Automne). For the 2022 vintage, these two wines were combined into one based on the experience gained. They adjusted the timing of the harvest and the selection criteria. The result is a wine that is more balanced on the palate than ever before, powerful yet somehow generous and approachable.
