Tasting notes
Juicy, tropical fruit such as pineapple and banana, sweet Watson pomelo with candy-like sweet flavour of Delaware. Well-balanced with a tannic bitter finish. Fresh acidity, but also rich and dashi-like umami flavour. The alcohol is also well detected. Please drink chilled to start!

Winemaking
Wine vinified by Kiyosumi Shirakawa Fujimaru Winery using Delaware grapes from the part-time farmer unit ‘Budou to Ikiru’. The unit is made up of young people from the Motosawa area of Yamagata City who wish to preserve the landscape of their hometown's vineyards. In 2023, the grapes were very ripe due to a hot summer and little rainfall. The hot nights also meant that the colouring of the grapes did not develop as quickly as in 2023.

The high sugar content of the grapes was clearly indicative of a hot year with little rainfall, and the acidity of the grapes was correspondingly low, so they imagined that the wine could be quite different to that of previous years. They decided to extract all the characteristics of the grapes, even those of the skins, to make a wine that would give a full impression of the vintage. Two wines, white and orange, were made from the same grapes at the same time, blended and bottled at the end. The former was pressed in whole bunches and fermented slowly for 16 days. The wine was then racked and matured in stainless steel tanks. In the latter, the grapes were carefully selected and put in whole bunches for 14 days in closed tanks (semi-carbonic maceration), then the tanks were opened and pressed. Fermentation continued for 14 days, allowing the elements from the grape skins to be extracted carefully and to the maximum extent possible. White wine alone is dry with a high alcohol content, but the addition of orange gives pineapple and banana notes that are typical of freshly made Delaware. The result is a pleasant wine with a gorgeous, bitter taste derived from the grape skins.
