Tasting notes
Fruity aromas of apple, pear and apricot, as well as fragrant and spicy notes of nuts and hay. The palate is moderately sweet, with mild acidity and a sense of maturity. The wine has a good balance between savoury and salty flavours.

Winemaking
Ashicoco is a white wine made mainly from Koshu, a grape variety indigenous to Japan, and has been produced annually since 1984, when COCO FARM & WINERY began making wine. The 2022 vintage is balanced by blending Chardonnay and Bacchus. The grapes were well selected, destemmed and gently pressed. The lees were allowed to settle and the clear juice was kept below 20°C to preserve the fruit flavours and fermented with wild yeasts for about one month. The tanks were cooled to stop fermentation when the balance between sweetness and acidity was right. Some tanks were co-fermented. After about four months in stainless steel tanks, the wine was racked, blended and bottled while being filtered through a membrane filter.

The wine's fresh fruity aroma and gentle, thick mouthfeel will delight first-time wine drinkers and wine experts alike. A Japanese white wine that goes well with all Japanese dishes made with Japanese fermented seasonings (soy sauce, miso, mirin, etc.) and is also easy to match with Western and Chinese dishes. 2012, 2013 and 2015 vintages of this wine have been used in JAL international first class, lounges and business class flights. From 2024 to 2025, sweetness of fruit and umami can be felt, and from 2026, it will be more integrated with age, with dried fruits and savoury notes.
