During the 2022 harvest, noble rot (Botrytis cinerea) developed naturally in the vineyard, and only botrytised fruit was selected for this special cuvée.\u003c\/p\u003e\n\u003cp\u003eThe grapes were gently pressed and the juice settled overnight at low temperature before clarification. Fermentation took place in stainless steel tanks at temperatures below 22°C over three to four weeks using indigenous yeasts, followed by malolactic fermentation with native lactic acid bacteria. The wine was then matured in stainless steel tanks for approximately six months before racking, blending, filtration, and bottling.\u003c\/p\u003e\n\u003cp\u003eThe richness of botrytised fruit is balanced by the complexity gained through slow fermentation and élevage. With 16.4 g\/L of residual sugar, the wine offers a gentle sweetness rather than a fully dessert-like richness. Kerner’s naturally vibrant acidity keeps the palate fresh and lively, creating a harmonious balance between honeyed generosity and bright freshness.
