Carrot glacé, black olive, simple pasta with sun-dried tomato pesto, chèvre, hummus, roasted vegetables, charcuterie, vegetable fritto, pizza Margherita
Winemaking
Pione, Shine Muscat, Monde Briller and Ryukyu Ganebu, grown by Shirai no Mi Farm, a farmer offering 'made-to-order grapes' in Mitoyo, Kagawa. These grapes underwent carbonic maceration for two weeks. After pressing, the wine was stored in stainless steel tanks for 3 weeks and bottled in October 2023. The difference from the 2022 vintage is the addition of Shine Muscat. Usually, Shine Muscat is sold seedless as table grapes, but in 2023, Shirai no Mi Farm grew seeded Shine Muscats. It was added from this vintage to add complexity to this Pioneer-dominated wine.
All of these varieties may not be heard of in Europe. Pione is the result of a cross between Kyoho, Japanese table grapes, and Cannon Hall Muscat, a tetraploid branch variation of Muscat of Alexandria. Shine Muscat is Japan's most popular table grape, characterised by high sugar content and moderate acidity, developed by crossing Akitsu 21 and Hakunan. Monde Briller was developed from Chardonnay and Cayuga White, which is resistant to downy mildew. Ryukyu Ganebu is a wild grape originated in Okinawa, located in the southernmost part of Japan, where UV rays and sea breezes are strong.
The name of the wine is derived from the British physicist Faraday. The name was chosen in the hope that the interaction between the S-pole (S for Shirai no Mi Farm) and the N-pole (N for Natan Winery) will develop Shikoku's agriculture and culture, which will be shared with the world, just as education and civilisation developed as a result of the electromagnetic induction he discovered. Please also enjoy the change in flavour as the temperature rises from around 16°C.
