The grapes were hand-harvested and gently whole-bunch pressed, then settled overnight at low temperature before clarification and fermentation.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003eFermentation began in stainless steel tanks at temperatures below 22°C for approximately ten days, after which the wine was transferred to oak barrels where fermentation continued with indigenous yeasts for around two months. Malolactic fermentation by wild lactic acid bacteria then followed.
