Part of the grapes were hand destemmed and fermented for about three weeks. The wine was then matured in oak barrels for 8-9 months, racked and bottled unfined and unfiltered. Until 2025 will continue to have fresh acidity and fruitiness. Incidentally, in 2020, 28 extremely hot days with a maximum temperature of 35°C or more were recorded at the neighbouring observatory in Sano. In general, grapes are more susceptible to disease when the days are too hot, as the acidity in the fruit decreases, and white wines in particular tend to taste flat. For the winery, it was everyone's wish to produce grapes that would not be affected by climatic changes such as extreme heat and heavy rain, and to produce good wine grapes of the right variety for the right place in the right climate in the northern Kanto region. In order to realise this wish, around 1990, a journey began to research and visit wine-growing regions around the world and to actually taste the grapes. The ripe grapes were destemmed, lightly crushed and transferred to small tanks, where the must was gradually warmed up during remontage. After a couple of days, wild yeasts and wild lactic acid bacteria came into play and alcoholic and malolactic fermentation took place without any additions. Careful and continuous remontage extracted sufficient colour and flavour. After about two weeks, the must was pressed and then transferred to oak barrels for malolactic fermentation with wild lactic acid bacteria and matured for approximately 12-13 months. The wine was racked and bottled without fining or filtration. Until 2027, the wine will continue to have a cool, refreshing taste with fruit and fresh acidity, and from 2028, the tannins will become smoother with age, changing to savoury-driven taste.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eThe main variety, Tannat, is a grape variety that they came across during their journey to find the right grape variety for the right place in Japan, which began around 2000. The wine is made from Zweigelt grapes from two vineyards in Yoichi, Hokkaido: Nakagawa Nouen is “hidden” among a series of hills in Nobori districtʼs northeast sector, a very sheltered spot with sandy soils and little wind. Konishi Nouen is in a far more exposed site, a hilltop overlooking the town of Yoichi and the Japan Sea. 2018 was a year like a rollercoaster. Continuous rain in early spring, cool weather during the flowering period and several typhoons hitting Hokkaido meant that humidity remained high in the vineyards of Yoichi until the end of August. At the time, most white wines made from Koshu were light and easy to drink, and the grapes were often thought to be light-coloured and soft-tasting. But in fact, they were actually astringent and very powerful... To bring out the flavour of Koshu, they started making this wine in 2004 to bring out as much of the grape's aroma and components as possible from the Koshu. The name ‘F.O.S.’ stands for ‘fermented on skins’.
